Regional Acadian, Bayou and Cajun Cooking

Cajun vs. Bayou

While there are many folks who dote on all things Cajun, preferably I would welcome the thought that the style of cookery we know around our locale be labeled ‘Bayou’ and it’s recipes, at least mine from our Delta’s perspective, be called 'Bayou Cooking'. To many,  Cajun refers mainly to the Louisiana area. The Bayou territory I refer to encompasses the southern parts of the Gulf Coast states of Texas, Louisiana, Mississippi, Alabama and the panhandle of Florida. And while we do have Cajun folks and influences in these areas, the Acadian way of life differs throughout the region.

But then, not many folks would rationalize Bayou cookery with that of Cajun nor tie any influences of Cajun to it whatsoever. So I guess it is best to leave well enough alone… Cajun Cookin’ it is!
