Picnic Baguettes

Happy July 5th
Today is all about Picnicking. Make a few simple eats, pack up the cooler and basket and get outside. It's a perfect day to spend time in the park, by the riverfront, next to a cool stream or do what we like to do, plop down at the edge of the gulf of Mexico. Here are a few ideas to take with you. Picnic Basket Baguettes Makes 4 sandwiches 1/2 of an 8 ounce container soft style cream cheese with chives and onion 1 tablespoon lemon juice 1 tablespoon Dijon style with horseradish mustard 2 tablespoons mayonnaise 1/4 teaspoon garlic pepper blend 1 -8 ounce loaf sourdough bread or French bread 8 ounces boneless fully cooked smoked turkey breast, sliced 8 ounces fully cooked cured ham, sliced 4 slices Provolone or Swiss cheese 1 -7 ounce jar roasted sweet peppers, drained and sliced 1 cup spinach leaves For the cream cheese spread, stir together the cream cheese, lemon juice, mustard , mayo and garlic pepper. Split sourdough loaf horizontally and generously spread cut sides with the cream cheese spread. On bottom half of the loaf, layer turkey, ham, cheese, roasted peppers and spinach. Cover with top of loaf. Slice crosswise into 4 pieces. Wrap sandwiches in plastic wrap or waxed paper and chill until time to pack the cooler. Wrap in plastic and surround them with ice packs in a cooler.
