Orange Comfort Drink & Chocolate Raspberry Cheesecake

Southern Comfort takes top billing with this after-dinner drink and blends wonderfully with the sweet juices of orange and lemon.
Following is the special dessert using the subtle flavor of framboise, an exquisite, clear liqueur made from raspberries. If desired, orange-flavored liqueur may be substituted for framboise in the recipe.

1/3 orange juice
1/3 jigger lemon juice

Chocolate Raspberry Cheese Cake
Graham cracker crust -see below
3 -8 oz packages cream cheese, room temperature
1 cup sugar
2 eggs
1 -8 oz package semisweet chocolate chips
2 tablespoons heavy cream
1 cup sour cream
1/4 cup strong coffee
1/4 cup framboise
1 teaspoon vanilla extract
Preheat oven to 350 degrees F.
Lightly grease a 9-inch spring-form cheese cake pan and sprinkle graham cracker crust mixture on the bottom, about 1/2 inch deep.
Stir sugar into the softened cream cheese and beat in the eggs.
In a double boiler, melt chocolate with the heavy cream.
Stir the melted chocolate, sour cream, coffee, framboise and vanilla into the cheese mixture. Pour into the spring-form pan.
Bake 45 minutes. Cake will be creamy and little runny in the center. Let cool and chill.
To serve, unmold and garnish with chocolate curls. Garnish platter with whipped cream if desired.
Graham Cracker Crust
Combine 2 1/2 cups graham cracker crumbs, 1/2 cup sugar and 1/2 cup melted butter in a bowl mixing well.

A refreshing drink like this after dinner on a hot spring day would definitely be welcome and the cheese cake is totally decadent! I have mini graham cracker crusts I can make this with!
