Macaroon Apple Pie

This is a recipe I adapted from Taste of Home.  There was nothing wrong with the original version. I just like my apple pie with brown sugar, cane syrup and bourbon. Let me know what you think.

Macaroon Apple Pie
6-8 servings

Crust
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 cup shortening
2 to 3 tablespoons cold water

Filling
4 cups sliced peeled tart apples
1/2 cup sugar
1/4 teaspoon ground cinnamon
1/2 cup toasted pecan pieces

Topping
1/2 cup all-purpose flour
3 tablespoons sugar
1/4 cup brown sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1 egg
2 tablespoons butter, melted
2 tablespoons dark Alaga Syrup or any cane syrup
2 tablespoons bourbon
1/2 cup flaked coconut

In a large bowl, combine flour and salt. Cut in the shortening until mixture is just crumbly and gradually add the cold water. Work gently with a fork until a ball forms. Roll out pastry to form into a 9-inch pie plate.

In a medium bowl, toss apples with sugar and cinnamon and spoon into the crust. Bake at 375 degrees F. for 20 minutes.

Meanwhile, in a small bowl combine the first five topping ingredients. Stir in egg, butter, syrup and bourbon until smooth. Fold in the coconut. Spoon mixture over hot apples and carefully spread to cover. Bake 30 minutes longer or until apples are tender.

  2. I have yet to use bourbon in any recipe. Easy pies are good for a lousy baker like me!

  3. Loving the ease. Baked apples my make my home sing. A definite "must do" although you are not helping my resolve to stay away from baked goods for awhile.

  4. What a lovely apple pie variation. I make a fine apple pie but sometimes I wonder what I could do to jazz it up. I'm going for this next time, the bourbon is a winner.
