Easy Oven Fish n Chips

Cooking for kids can be a challenge. Making them eat fish may be even trickier. This is why you are the parent, to come up with a fun way for them to enjoy fish on Fridays. Come on, lets do it. First, fold newspaper to form hats, just as you did in kindergarten. Cut out circles of black construction paper and use elastic string to make eye patches. In other words, create a pirate theme for boys. Use hula girls for, well, girls. Make it interesting and fun for your children; let them have a playtime with tonight's meal. Take an ordinary vegetable and be creative, like mashing up english peas and calling it galley mush.


Okay, I may not be the best in entertaining your kids, but I do know how to cook. Like this simple meal baked in the oven. No frying means less grease and that means a healthier dinner. Enjoy!

Easy Oven Fish n Chips

Vegetable oil spray
4 large russet potatoes
1 tablespoon vegetable oil
Salt, pepper and other seasonings for potatoes
1/4 cup cornmeal
1/2 cup crushed cornflakes or Panko
Salt, pepper, cayenne and other seasonings for fish
1/2 cup buttermilk or skim milk
1 pound flounder, red snapper, or other fish fillets
    Preheat oven to 450 degrees F. Spray 2 baking sheets with vegetable oil spray.
    Wash potatoes well and peel if desired. Cut potatoes into about half-inch thick slices. Cut these into about half-inch strips. Pat dry with paper towels and place in a bowl. Pour 1 tablespoon of oil over the potatoes and toss oil evenly all over potatoes. Add any seasonings you like. Arrange potatoes on cookie sheets in a single layer. Bake for 45 minutes, turning once or twice with a spatula to allow each side to brown.
    Meanwhile, mix cornmeal and cornflakes together, place in a shallow bowl. Season the mixture with salt, pepper or to taste. Place buttermilk into another shallow bowl. Cut fish into pieces that are approximately 1 by 3 inches.
    When potatoes are crisp and brown, remove from oven and keep warm.
    Dip fish pieces into the buttermilk, then into cornmeal mixture, making sure that all the fish are thoroughly coated. Spray a baking pan with cooking oil spray. Arrange fish sticks about half-inch apart and spray the tops with the cooking spray. Bake fish for 6 to 8 minutes or until one flakes easily with a fork.
    Serve with lemon slices, seafood sauce and ketchup, if desired.

    3. love panko and cornflakes, I actually combine panko and italian bread crumbs lol go figure, your fish is a perfect color and so much healthier than fried awesome picture!

    7. I love using panko and or cornflakes as the crust. My aunt introduced me to using cornflakes a couple of years ago. Great recipe!

    9. Cornflake coated chicken baked in the oven is another combo that I love. Any recipe that will get kids to eat food that isn't sold in the frozen food aisle is a winner in my book.
