Old Fashion Raisin Muffins



Some days there is nothing better than a recipe from the past. One like your momma made that filled the house with goodness. Enjoy!

Old Fashion Raisin Muffins


makes 12 

1 cup dark raisins
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 large egg
1 cup brown sugar - packed
1/2 cup butter, room temperature
2 tablespoons vegetable oil
    In a small saucepan over medium heat, add raisins and just enough water to cover, about 1 1/2 cups. Bring to a simmer and cook covered on low for 20 minutes. Remove from heat and allow raisins to cool in the liquid.

    Preheat oven to 350 degrees.

    Lightly coat with additional oil the cups of a 12 regular muffin tin.

    Sift together in a large mixing bowl the flour, baking powder, baking soda, cinnamon, nutmeg and salt.

    Beat the egg in a small mixing bowl, add brown sugar, butter, oil and mix well. Add the raisins along with the liquid from the raisins. Stir well.

    Fold the wet ingredients into the dry ingredients and mix just until moistened. Batter should be thick but fluid and stirs easily. Add additional water if needed.

    Divide batter into the prepared muffin cups filling each cup about 2/3 full.

    Bake for 20 to 25 minutes or until golden brown. Check after 20 minutes. Use a toothpick to insert into the center of a muffin. They are ready when the toothpick comes out dry.

    Note: This is also great mixing in some dried apples while cooking the raisins.

    7. I would hide these from my family so I would have a couple the next day. Then I'd cut them in half and toast them and put a gob of butter on top...this is a great basic muffin recipe!
